610 Magnolia’s Chef Collab Dinner Series for 2026 kicks off at 6:30 p.m. on June 23 with chefs Max Chuvalas and Chaelin Lee from SHIA in Washington, D.C.
Chef Edward Lee’s SHIA is a modern Korean fine dining restaurant in D.C. focused on sustainability and innovation. They are a tasting-menu-only restaurant with ingredients that span our local agriculture as well as the finest Hansik ingredients from the Korean peninsula. Their non-profit initiatives include critical issues that face the restaurant industry at large from environmental to equity to cultural.
Together with 610 Magnolia’s chef Jeff Potter, a special six-course tasting menu will be created (for one night only).
SHIA’s collaborators:
Chaelin Lee (Co-Executive Chef). A graduate of the The Culinary Institute of America, she trained and advanced in Michelin-starred kitchens including Kinship, Métier, and Masseria, where she rose from Line Cook to Executive Sous Chef.
Max Chuvalas (Co-Executive Chef). Max honed the kitchen craft under the mentorship of renowned chefs such as Edward Lee, Tristen Epps, Jeremy Ford, and Marcus Samuelsson. These contributions were instrumental in helping earn Michelin stars, Bib Gourmand awards, and numerous regional accolades.
