The History of Pho: How Did Vietnam’s Most Famous Soup Come To Be?

Although some epicurean scholars claim that the name “pho” is derived from the French dish “pot-au-feu”, which means “pot on the fire”, others suggest it comes from the Cantonese word “luc pho,” which is an abbreviated form of “nguu nhuc phan” or “beef and rice noodles.” Either way, pho quickly became a beloved dish in northern Vietnam, and soon spread within and beyond its borders.

Not coincidentally, there’s a new Vietnamese eatery in Jeffersontown.

Pho & Treats brings Vietnamese cuisine to Jeffersontown, by Michael L. Jones (Louisville Business First)

Pho & Treats opened March 14 at 9158 Taylorsville Road in the Stony Brook Shopping Center. The space was previously occupied by Bambu Desserts & Drinks.

The restaurant serves a variety of crepes, banh mi sandwiches and pho, a Vietnamese soup made with broth, rice noodles, herbs and meat. The menu also includes smoothies, Vietnamese coffee and desserts.
